These past few weeks my little halogen oven has been very busy. Busy with the baking of the many variety of puff that I have been trying out. I started off with potatoes and mayo, followed by canned spicy tuna. Then I went on to Apple and cinnamon (a great hit with Azwaj and mommy) and finally my personal favorite,  chocolate.

I’m still trying to find the perfect filling for my puff. As I've run out of apples, I’ve been pestering mom to make her “Sambal ikan bilis” and hope she will do that soon. In the meantime.. the halogen oven rest.

I don’t know about you but boiling eggs to get to the 3/4 boiled level is not easy for me. It’s either 1/2 boiled or overboiled in which case it becomes hard boiled egg.

Anyway, during our condo’s family day event, I won this little gadget and was told it will help me with my egg boiling. Just boil water, add it to the gadget to the water level depending on how cooked you want your eggs, put in the eggs and leave it till the water runs from the top level to the bottom level of the container. Sounds too darn easy right? Well you betcha I was skeptical.


Anyway.. I decided to give it a try this morning for breakfast. I put two eggs in, poured hot boiling water to the 2nd level as stated on the container (there are three lines, so I am assuming the middle one would give me 3/4 boiled egg), and put the lid on. The moment the water was poured, the hot water started to drip through a tiny opening at the base of the top container so I guess it must be working right. Keeping the faith, I went to shower.

After about 15 minutes, I returned to find all the water had dripped from the top level to the bottom of the container. I took off the lid and took out the lukewarm eggs and cracked it open into a bowl.

OMG! Impressed I am. Check out the nicely 3/4 boiled eggs below. I am sold!


Told Azwaj about it and ask him to try it in case it was a fluke and he got the same results. Impressed we are.. lol

There could only be two reasons why me and Azwaj could be very very quiet at the dining table. One is we’re having an argument or two when the food is absolutely delish that we are both speechless and just enjoying the food. lol.. Well today was just that instance, the latter I mean, and with the diptyque candle to set the mood.. let’s just say we were in food heaven :)

I’ve always loved baking and I remember bringing home with pride all the cakes and cookies that I’ve baked in school during our home economics classes. Mom and dad has always been supportive which makes me all the more confident of my baking. lol! Fast forward a few years and baking has been made more easier with easy to bake recipes which can be found all the over the internet.

For instance, can you believe that this brownies is only with with only three ingredients ? Yeap.. Nutella, Flour and Eggs (in my case I added almonds) and the results? Well see for yourselves! Now all I need is some nice table linens from http://www.premiertablelinens.com a nice plate to serve it in and the whole experience is made.


Brownies with Three Ingredients

Recipe Type: Dessert
Prep time:
Cook time:
Total time:
Make Brownies using Nutella, Flour and Eggs
Ingredients
  • 1 cup (280g) Nutella
  • 2 eggs
  • 10 tbsp (62g) flour
Instructions
  1. Put everything in a bowl
  2. Mixed everything well
  3. Pour into a pan or muffin tin.
  4. Mixed in almonds bits if you like.
  5. Bake at 350F (180C) for around 30 minutes (less time for cupcake form, more time if the centers aren’t baked through).

When I’m in the mood to cook, I am really in the mood to cook… and seeing how we have water supply today at our condo (water rationing sucks big time), I decided to cook fried noodle and bake a cake for dessert. The ingredients for the cake was easy enough to get but whaddaya know the supermarket ran out of yellow noodle! Anyway I thought of just using “Bee Hoon” instead but Azwaj saw was eyeing the fusilli instead and asked me if we could substitute Beehoon for that instead. I told him.. “Why not?”.. lol!

We slept at dawn and by the time we woke up it was close to 2pm. Of course it being lunch time and with the weather so cold these days, needless to say we were starving. Of course we didn’t feel like going out since we just woke up so I decided to just whip up a fresh batch of anchovies fritters. The fritters batter are not made from scratch so these cannot compare to the ones that mommy made… but hey if the stomach is happy, we are happy.. lol!

So on my trip to Sarawak, there was three items that I really really really wanted to buy. First, it’s the Kek Lapis (I will blog about it later), Ikan Terubuk Masin (blog post coming as well) and the Gigantic Udang Galah… and here they are.


Because we were in a rush, the travel guide suggested that we pre-order the Terubuk Masin and the prawns and the supplier will pack them up nicely for us and send to the hotel for collection. The prawns was going at RM50 a kilo so I only ordered a kilo (I’m not rich you know..lol). I only knew when I got home that there was only 5 huge and one medium size prawns in the nicely packed box.

Anyway, once cleaned, we decided that since the prawns were huge, we would cook them in two style. Azwaj would bake two of them and I would cook the remaining ones. Here are the results.. Yummy for sure! Ahhh.. if only we had those Royal Teak Collection Miami Teak Deep Seating Patio Chair from homeandpatiodecorcenter.com around, we will surely feel like we are on holiday as we enjoy these succulent prawns!

If last week saw me eating away in Singapore with plenty of high carb food, this week I’m giving my tummy a break. We went grocery shopping yesterday and even I was amazed at the discpline both me and Azwaj had. No junk and fatty food. Our basket only had vegetables, tofu, fish and meat. So healthy…lol!

Anyway this is what I had for lunch today. “Oven Baked Dory with Salads”.

Not sure what the menu for dinner will be but it should be equally healthy. I have never felt this healthy before! Now all I need to complete the regime is some exercise and I’m good to go!

On my last trip to Singapore (which also happened to be during Ramadan), me and mommy decided that since there was extra pineapple tart jam, we would make swissroll and use the jam as filling. The swiss roll turned out beautiful and with the home made jam, it was absolutely divine. Isn’t it lovely?

I may have found a new hobby.. BAKING!  Well actually, I’ve always love baking, in fact much more than cooking but since Azwaj does not really fancy cakes and the likes of it, I became sort of lazy to pursue it.. I mean I can’t possibly eat all those baked stuff myself right. 

Anway, last Saturday, I was fortunate enough to have been in Singapore to attend my BFF, Salwah Omar’s, baking class. Salwah is my BFF from junior college and while still maintaining a professional career, she is also an entrepreneur taking orders for wedding cake, cupcakes and conducting baking classes.

The class I attended was for tartlets making. Basically it covers how to make the tartlets shells and for filling, there was blueberry cheese tart, fruit tarts and pecan filling. Since I wasn’t there officially as a student, I offered to help for the day and since it was a demo and hands on class, there was plenty to help around with. So after the students did their first round of tartlets shells, I manned the oven while Salwah taught them how to prepare the filling… but guess what Salwah was nice enough to have prepared enough dough for me and another one of her helper to do our own tartlets… so I got to bring home some of my very own tartlets to share with mommy. I especially love the Blueberry Cheese Tartlets and am sure I will set some time of one these days to do my own… my baking hobby renewed!

The same way people have data backup solutions, I have one backup plan to make sure Azwaj has something to eat when I’m not around next week… and that is spaghetti. It’s filling, easy to make and even easier for him to heat up in the microwave oven. This way, he is sure to have something to eat when he does stay up late at night.

If I was on an eating spree in Singapore, now it’s my mommy’s turn to eat her heart out in KL. We’ll be eating by the poolside or having Azwaj’s lamb chop for dinner tonight, we have not decided yet but for dessert, I made mommy my special Caramel Custard.

So I guess I can forget about my diet and quick weight loss program for now eh?
